Baked Egg Cups

6 slices of ham (we used Canadian bacon)
6 raw eggs
1/2 cup shredded cheese
1 Tbl. chopped chives (or herb of your choice)
salt
pepper
olive oil

Preheat oven to 350 degrees. Grease 6 muffin pan cups with olive oil. Line each cup with a slice of ham. Bake 10 min. Remove from oven and break an egg into each cup, gently breaking the yolks. Sprinkle with salt & pepper. Bake an additional 10 minutes or longer if eggs are not done the way you like. Remove from oven and sprinkle with grated cheese and chives. They are best served immediately, but we found they are not bad when re-heated.
